The Joy is there to tie it together, while Liquid Amber really helps create the right flavor profile for the nectarine. Those two go well together in pastry recipes. The meringue helps provide, IMO, a better mouth feel.
I like to add a very small amount of sweetener to this, but I know many people don't, so adjust accordingly. I feel like a bit of butter flavoring might take the recipe to the next level, but I don't have any. YMMV.
I'm honestly really proud of this juice. It's one of my few (out of WAY too many failures) that I think can stand up to premium lines.
