Percentages in recipes Average mixing quantity: 2.9% (Median: 2.5%) Minimum used quantity: 0% Maximum used quantity: 66.7% This works as a cream booster below 1% in a mix. It adds smoothness, mouth feel and a hint of cocoa butter. Between 1-3% in a mix, you get a rich smooth white chunky chocolate bar taste. Vanilla and cream notes are also present, along with a fantastic rich cocoa butter note. My usage in a mix: 1% and below as a cream boost, 1-3% as a more dominant note It doesn't seem to affect coils like its dark chocolate counterparts.

Definitely a must have flavor in a mix I stick around 3-5% for the main profile or 1%-2% in a mix Mouth Feel - smooth and heavy on the tongue, with no throat hit moderately dense I'd give it a 6 out of 10. Flavor Properties- rich and sweet with a smooth buttery flavor. Creamy with a hint of vanilla and that fantastic Sweet Bitter cocoa butter flavor. Off Flavors - a very slight chalky flavor and aftertaste. Position in the recipe - should be versatile depending on what your pairing with. Doesn't have the punch to be a top note unless you're mixing it who did nothing but cream. Should make a great accent and work well in the base. Pairings - other chocolates and creams should work well. The whole list of berries and should pair well with most bakeries, and caramel flavorings. The Best White Chocolate I've had, no black pepper taste either very soft and adds mouthfeel to a juice. Don't over heat it chocolates change quickly w/ too much heat. I like to use it around 2-4% in a mix.
